Chickpea and Black Bean Salad
This Chickpea and Black Bean Salad Recipe is packed with flavor (thanks to fresh herbs, lemon, and garlic!) and is the perfect side dish. It just keeps tasting better as it hangs out in the fridge!

Chickpea and Black Bean Salad (Recipe)
Ingredients
- 2 15 oz cans chickpeas (rinsed and drained)
- 1 15 oz can black beans (rinsed and drained)
- 1/3 cup extra virgin olive oil (Kasadrinos **FREE Bottle**)
- 1/2 large yellow onion, diced (about 1 cup)
- 1 cup fresh parsley (chopped)
- 1/2 cup fresh cilantro (chopped )
- 1 tbsp fresh mint (chopped
- 1/3 cup lemon juice
- 1 tbsp red wine vinegar
- 2 tsp garlic powder
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 1/8 tsp cayenne
- 1 tsp cumin
Instructions
- 1. Combine all ingredients in a large mixing bowl. Stir well and allow to marinate in the fridge for 30 minutes before serving.
- 2. Serve as a side, on top of rice, greens, or in wraps. Delicious additions include feta and avocado.
