Chickpea Salad
This Mediterranean style chickpea salad with feta is ready in 10 minutes. Perfect for a satisfying lunch, tasty side dish or even meal prep ahead.

Chickpea Salad (Recipe)
Ingredients
- 1 can chickpeas, 400g/14oz
- 1 can corn kernels, 400g/14oz
- 1 cucumber, medium
- 1 red pepper, small
- 200 g cherry tomatoes
- 100 g Greek feta
- ⅓ cup flat leaf parsley, chopped
Dressing
- 3 tbsp olive oil, extra virgin
- 2 tbsp lemon juice
- 1 garlic clove, crushed
- salt, to taste
- pepper, to taste
Instructions
- 1. Open and drain canned chickpeas. Give chickpeas a rinse under water before using.
- 2. Open and drain canned corn.
- 3. Chop cucumber into small pieces.
- 4. Cut cherry tomatoes into halves.
- 5. Slice and cut bell peppers into bite size pieces.
- 6. Roughly chop parsley
Dressing
- In a mason jar, add extra virgin olive oil, lemon juice, garlic, salt and pepper.
Shake until well combined.
Assemble
- 1. In a large bowl, add all the salad ingredients except for feta.
- 2. Pour dressing on top and toss to combine.
- 3. Crumb feta on top of salad and gently toss it through.
