Spinach Egg Muffins

These spinach egg muffins are simple to make and perfect for prepping ahead for busy mornings.

Spinach Egg Muffins (Recipe)

Ingredients

  • 6 large eggs
  • 10-12 oz bag frozen spinach, thawed one bag
  • 1 tablespoons extra virgin olive oil (Kasadrinos **FREE Bottle**)
  • 1/3 cup feta cheese
  • ¼ cup milk (optional)
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/2 medium yellow onion finely diced (optional)
  • 1/2 cup sun-dried tomatoes sliced (optional)
  • kosher salt and black pepper to taste

Instructions

  • 1.  Chop the green onions, spinach & tomatoes and put everything in a larger bowl.


  • 2. Add the eggs, milk and spices to the bowl and mix thoroughly with a whisk.


  • 3. Preheat your oven to 300°F/150°C.


  • 4. Spread your egg mixture over 6 molds of a silicone muffin pan or muffin pan.


  • 5. Crumble the feta cheese over your egg muffins before putting them in the oven.


  • 6. Bake your spinach & tomato egg muffins for about 25 minutes in your preheated oven.
