Vegetable Barley Soup

This vegan vegetable barley soup is hearty, nutritious and incredibly tasty. It’s easy to make and is a great fall or winter meal.

Vegetable Barley Soup (Recipe)

Ingredients

  • 1 pc onion
  • 1cup pearl barley
  • 1 tablespoons extra virgin olive oil (Kasadrinos **FREE Bottle**)
  • 14 ½ oz canned tomatoes with juice, diced
  • 1 large potato or sweet potato, cubed
  • 1 pc carrot chopped
  • 2 cloves garlic
  • 2 stacks ribs celery chopped
  • 1 cup frozen corn defrosted
  • 1 pc green bell pepper chopped
  • 1tsp garlic powder
  • 1 tsp Italian Seasoning
  • 1 teaspoon (5 g) thyme
  • red pepper flakes, optional, or cayenne or fresh chili pepper
  • 1 bay leaf
  • 8 cups vegetables broth or chicken broth

Instructions

  • 1.  Heat the oil in a large soup pot on low heat.


  • 2. Add the chopped onion, carrot and celery. Lightly season with salt and pepper. You can add more seasoning at the end. Cook for 3 minutes or until the onions are translucent.


  • 3. Add the Italian seasoning and the dried parsley, along with the garlic, and stir those in to incorporate.


  • 4. Stir in the vegetable broth. Add the fresh parsley, thyme, bay leaves and red pepper flakes.


  • 5. Cover and increase the heat to quickly bring to a boil then lower the heat once more to a slow simmer for 15 minutes.


  • 6. Stir in the cooked barley. Add more water if needed. Continue cooking for an additional 5 minutes.


  • 7. Taste and adjust the seasonings to your liking. Remove any thyme stems and bay leaves.


  • 8. Remove from heat and serve.
